Fritters and salad


Here I go again with pictures of food - I suppose it's just to prove that this diet certainly isn't boring!
Today's lunch was cheesy fritters (left over from last night, I made 2 portions) with salad. The twist today is the tomato dressing on the salad - a packet of pizza topping mix, made up with some water as in the instructions, and then with some red wine vinegar (1/2 Tbsp) some chopped mint and some sweetener (1 tsp). All mixed together, it makes enough dressing for 2 salads, and means I'm not using any of my oil allowance for dressing.
